Aromatics: Plum, Black Cherry, Baking Spice

Palate: Lush & Supple, Bright Acidity, Velvety Tannins

Production notes

Hand Harvested & 100% de-stemmed into open top fermentation tanks. Fermented at 85 degrees for 14 days. Once primary fermentation was completed the wine was left for a extended maceration time of 7 days. The must was gently pressed and wine transfered to nuetral french oak barrels. The wine was left to age on the lees and was never racked up until bottling.
